If you want brawlers with story, the entire Shenmue Series and Yakuza
series is available.
If you want a similar setting in an RPG environment Jade empire.
Karateka in itself was a very unique game which Prince of Persia is the
closest.

Later games until 3d hit cut down on the story and made the action
faster and others emphasized on the fighting only (aka fighting games
like Mortal Kombat or Virtua Fighter)

Well... there's the original "Karateka" port, released in 1986. It
might be a bit hard to acquire (or get running on modern PCs).

There's also the 2012 "Karateka" remake, available on Steam.
Beyond that, I'm not sure what would make a 'Karateka style' game,
beyond the usual side-scrolling brawlers. There are a huge number of
those, ranging from ports of the old classics like the "Double Dragon
Trilogy" to newer stuff like "Mighty Fight Federation". Then there are
adventure beat-em-ups like "Prince of Persia: The Lost Crown" or "Mark
of the Ninja".

And if you include arena-fighters, then the selection grows
dramatically. But suffice to say, the "Mortal Kombat" and "Street
Fighter" franchises are still quite healthy.

The TL;DR of it all is that you /may/ have to be a bit more specific
in your request ;-)

I would not say that the other options really come close, the closest
probably would be Prince of Persia 1+2...
From modern games probably the Yakuza series and Shenmue!
