The chorizo is all the seasoning you need on top of the aromatic pepper/onion
base. The Knorr-Swiss ramps up the umami factor but soy sauce and/or MSG would
do much the same.

I can have SOME onion and garlic, just have to be careful. Which is a shame
because I used to use them a lot.

Most people have trouble getting past putting more than kidney beans in chili.
For one thing, they aren't really southwestern - pintos and blacks are. That
said, I like to use a variety of beans for color, texture and taste.
