My Linux-running laptop has both wired and wi-fi interfaces. Normally the
wi-fi is enough (and of course convenient for moving around), but
sometimes I want to do large amounts of data transfer that can benefit
from the faster wired interface.

I have the MAC addresses of both interfaces configured into my DHCP server
(also on a machine running Linux), and I assign them both the same IP
address.

What this means is, I can start an rsync transfer using wi-fi only, decide
it’s not going fast enough, so I plug in an Ethernet cable (I have switch
ports around my house) to speed things up, without having to stop and
restart anything.

I had a check online to see if Windows offers something similar, and it
appears Windows Server does indeed have some complicated settings you can
configure, which I think achieves that sort of effect. Users of regular
“desktop” Windows are out of luck.

I mentioned previously the difference between “desktop” and “workstation”
OSes: this is yet another reason why Linux is more than a “desktop” OS, it
is a “workstation” OS.
